Not sure why we would assume that it's bird if the statement expressed how if the animal is a chicken then we have to assume its a bird

Claretta, it is a straight conclusion from the premise in the statement.

Logic rule: If A then B. A. So, B.

If animal is chicken, then animal must be a bird.

Animal is chicken. So ....

Animal must be a bird.
